Happy New Year! It’s hard to believe it is 2016 already! Time just flies by!
Did you do anything fun for New Years?
Matt and I decided to go down to Washington DC to ring in the New Year there. Since neither of us are really into the crowded bar scene, we instead decided to grab dinner and go ice skating at a rink located in the National Gallery of Art’s Sculpture Garden. He and I have been wanting to go ice skating for years but can never seem to find a good time to go! It was awesome getting to ice skate with him in central DC on a beautiful night!
Around 10:30pm we both realized that we were exhausted and trying to stay up to see the fireworks at midnight might just be too much. So, instead, we relaxed in our room and watched the ball drop on TV and were asleep promptly at 12:15am. Not a bad New Years in my book.
Even though the holidays are over, it doesn’t mean that you need to give up making amazing food. These Balsamic Roasted Green Beans are a perfect example of that. They jazz up an ordinary side and are incredibly easy and quick to put together. I put mine together with just five minutes of prep work!
First I laid out my green beans in a baking dish.
Then tossed them with the balsamic vinegar/olive oil sauce.
Add some almonds, and roast!
You add the Craisins® Dried Cranberries- Cherry Juice Infused and red onion, and that’s it! Super easy and super delicious.
I really love the Craisins® in this dish. They are really versatile treats that can be used in so many different recipes! Plus they are a great way to sneak fruit into your meals as only 1/4 cup of Craisins® provides a whole 1/2 cup serving of fruit! In addition to being provided in a variety of sizes, they are easy to find at stores like Walmart in their dried fruit section. That is where I found both my Craisins® Dried Cranberries- Cherry Juice Infused and their new Craisins® Fruit Clusters- Cranberry Almond flavor! Here’s a photo of the aisle where I found it!

- 1 (12oz) bag fresh green beans
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/3 cup slivered almonds
- 1/4 cup red onion, thinly sliced
- 1/3 cup Craisins® Dried Cherries
- Preheat oven to 350F. Place green beans in a single layer in a baking dish. In a small bowl, whisk together balsamic vinegar, olive oil, salt and pepper. Pour over green beans. Sprinkle on slivered almonds. Place in the oven and cook for 25 minutes.
- Once cooked, top green beans with red onion and Craisins®. Serve warm.
