I’ve said it before and I will say it again, I just love fall. The colorful trees, shuffling through crunchy leaves, and the cool, crisp weather all just make me want to soak in every second of the season. I want to decorate everything with pumpkins and leaves and cuddle under a nice blanket.
Italy, it seems, does fall differently than I would prefer it. Sitting here writing this it is 70 degrees outside. The forecast? Much of the same as far as weather.com is concerned. Now, I can’t complain too much. It is lovely weather. But to me that is what September should feel like, not November.
Ah well, I’ll just sit here and enjoy my Harvest Pumpkin Blue Moon, on our gold leaf table runner, looking at my little fall fox centerpiece. Hey, it helps, right?
In this spirit I’ve been thinking a lot about the upcoming holidays, especially Thanksgiving.
For most of my life we would eat hardly anything the day of Thanksgiving until it got to dinner (which we usually eat around 4-5ish). While it definitely saturated my cravings for turkey, it also kind of shrunk my stomach a bit so I couldn’t eat as much. Major problem.
Lately we’ve been getting into a tradition I like much better. Instead of fasting all day before dinner, we will make a nice breakfast and then wait until dinner again to eat. Usually we’ll make a nice breakfast casserole like this holiday french toast casserole. We fill up on that deliciousness and then wait for our scrumptious dinner.
I actually love doing this because 1). I’m not starving all day 2). It doesn’t shrink my stomach 3). It’s delicious! On a day about food and giving thanks, why starve yourself? It is one day where I just try and forget about the calories and enjoy it. I only do it once a year so it’s fine, right?
Well, however it works in your home, guests will no doubt be salivating waiting for that turkey to come out of the oven. Starving guests hovering over the kitchen waiting for that moment when they can dig in. And I got to thinking, why not make a little bite sized appetizer that could hold people over on Thanksgiving (or any holiday for that matter) until the main event arrives? It could keep your guests happy and give everyone a little delicious treat to snack on.
In comes these Cheddar and Apple Bacon Slices. SUPER easy to prepare and made in just 15 minutes! With everything going on the appetizer has to be simple to whip up and keep your stove free! All you need is 5 minutes to cook the bacon and the stove can be regained! Do a little of slicing and stacking and boom! Done!
The combination is out of this world. Sweet, crisp apples contrast brilliantly with the sharp, Vermont cheddar cheese. The crunchy and salty bacon adds further texture and depth while the drizzle of honey gives it an extra little sweetness. The result is a perfect bite that can fill the stomach a little bit and really wow guests.
Be it Thanksgiving, Easter, Kwanza, you name it-these Cheddar and Bacon Apple Slices are the perfect appetizer that will keep you focused on the real food while still catering to your guests. They will surely be impressed!
- 4 slices bacon
- 1 green or red apple, cut into 1/3" slices
- 1 lemon
- 2-3oz Vermont cheddar cheese, cut into 1/4" slices
- Honey, to taste
- Place a medium pan on medium heat and cook bacon until browned and crispy on both sides, about 5 minutes. Remove from the pan and allow to drain on a piece of papertowel.
- In a bowl, toss apple slices with the juice of 1 lemon.Then, top each apple slice with a small piece of cheddar cheese. Break off a piece of the cooked bacon and place it on top. Finally, drizzle on desired amount of honey.
- Serve at room temperature.
- Tossing the apple slices in the lemon juice will help prevent the apples from turning brown.
