This Chunky Black Bean Salsa is light, fresh, and packed full of flavor! The best part is that this snack can be prepared in just 10 minutes!
You know what surprises me? How surprised everyone is to find out how many wedding details I already have planned. Clearly they don’t me well enough to know that I’ve been planning this all out in my head for months now.
This past weekend my mom and I went to a bridal expo downtown. I was super excited to go because I really needed to find a DJ and photographer- which by the way I’ve decided will be Matt’s job as he is a photographer in his own right. Anyways, there were what seemed like a zillion vendors who all had such great stuff. I definitely found some I did not want to work with but I also found some I loved! I even got one of the things I was going in there for- a DJ!
I was asking them all how I could tell a good DJ from a bad DJ and they told me it was all about their personality and how you feel you connect with them. As soon as I started talking to this one I was sold! So now I can check one more thing off of my wedding to-do list!
With all this wedding excitement going on I still find time to get excited for the Big Game next weekend! Although my team is not in it I’m super excited to see who wins- and to eat all that great food while doing so!
Now if you are like me, you want to bring your own dish to the party. And I’ve got you covered with this Chunky Black Bean Salsa.
This salsa is SO EASY and seriously so delicious. It is light and fresh with great flavors of citrus, creamy avocado, and crispy corn. This recipe makes a huge batch but trust me, you won’t be going home with any leftovers because it is that good!
The secret to this recipe is all the great time-saving tips it uses. In particular, using canned goods plus fresh produce make any meal or party snack delicious and one that anyone can make! One of the great ingredients in my salsa is Ro*TEL canned tomatoes and green chilies. It takes away the pain of carefully chopping tomatoes and green chilies and makes them so tasty and simple! It really makes cooking stress free and makes party recipes like this one a breeze to put together! Here is a photo of where I found my Ro*TEL products and some of the produce offered at Walmart!
Oh! And with this recipe I also have some great avocado-hacks to share with you!
One, do you know how to peel an avocado quickly? Simply slice the avocado in half lengthwise, pull out the seed, then use a spoon to scoop the avocado out of it’s shell! Just run the spoon along the inside of it’s shell just below the flesh of the avocado and above the skin. The whole thing will come out instantly and in one nice piece! Here are some pics to demonstrate!
Also, did you know that, like apples, once the inside of an avocado is exposed to the air that it will begin to turn brown? To prevent this simply pour a little citrus juice over the exposed avocado flesh (or apple) in order to prevent browning! This recipe makes it even easier because there is lime juice in the vinaigrette! Talk about a perfect combo!
Once you have that done, the rest is a breeze! Simply toss all ingredients in a bowl and stir!

- 2 cans black beans, drained and rinsed
- 2 cans chunky Ro*TEL tomatoes, drained
- 1 can corn, drained
- 1/3 cup chopped red onion
- 3 tbs olive oil
- 3 tbs lime juice
- 1 tsp hot sauce
- 1/4 tsp salt
- 2 avocados, diced
- Tortilla chips, to serve
- In a large bowl gently mix together beans, Ro*TEL tomatoes, corn and red onion. Set aside.
- In a separate bowl, whisk together olive oil, lime juice, hot sauce, and salt. Pour over salsa and mix well. Then, add chopped avocado to the top of the salsa and gently fold in, ensuring all pieces are coated in the lime vinaigrette. Serve at room temperature or chilled.
