Holiday meals are made better with this Crockpot Pork Tenderloin with Apples. No one will suspect how simple or quick it is to put together!
I love the holidays. Now that we are past Halloween it is time to break out all those delicious, special meals and cook them up once more. There is just something so special about this time of the year. Everyone seems to be ready to reconnect with family and friends and sit and enjoy a good meal together.
I also love this season because of the food. What other time of the year do you so often make an attempt to have a full, comforting, and even fancy meal for more than just one day? Other than just the big holidays, in my family we also love to have a nice meal the night before we trek to Wisconsin to visit our relatives for Christmas. It is a nice time for just us to sit down and enjoy a nice meal before we deal with the
chaos happiness that spending time with distant relatives brings. We also love to enjoy a nice meal on New Years Eve, one that usually involves snow crab legs (Hey, we’re from Maryland, it’d be against my nature to NOT have some type of crab for a special occasion)
In this spirit I wanted to share with you my recipe for Crockpot Pork Tenderloin with Apples. This meal is super easy to prepare and is one that is really special. It takes only minutes to put together but slowly cooks for hours in the crockpot. The smells that fill the house are amazing and leave you salivating until dinner time rolls around.
The finished pork loin ends up being rich and moist. The pork pulls apart with just a fork and absorbs all of the wonderful flavor of the apples, onion, carrots and bacon. It is the perfect meal to help celebrate and wow your guests, but it is also one that is simple enough to have for dinner any night of the week.
- 1 2.5lb pork loin
- 1 onion, cut in slivers
- 2 green apples, sliced
- 8oz baby carrots
- 1 clove garlic, minced
- 2 slices bacon, chopped in 1" chunks
- 2/3 cup chicken stock
- 2 tsp dried rosemary
- Trim excess fat off of the pork loin. Season all sides generously with salt and pepper. Place the crockpot on low heat and place in half of onion, apples, and carrots. Top with pork loin, garlic, and bacon. Add remaining onion, apples and carrots to the top of (and around) the pork in the crockpot. Pour in chicken stock and top with sprinkled rosemary. Cook on low for 8 hours or on high for 4 1/2, or until meat slices easily.
- 1. Cut the onion and apples into similar sized slices so that they can cook evenly. They should be about the same size as the carrots.
