Can you tell I’m excited?
Now I know it isn’t like that for everyone, but here in Maryland that makes me very excited. Last week it was nearly 60 and this week they are calling for it to be 70 on Tuesday and Wednesday!
It was such a relief even to have it at 60 the last two days because I got to go outside without a jacket on, open up the windows in the house and finally let in some fresh air. I hate stale air. I feel much better whenever I’m in a room with a ton of natural light and nice, fresh air.
Anyways, I was rejoicing at the change of season. They say March comes in like a lion and out like a lamb, but hopefully it just stays like a lamb the whole time!
The nice weather we’ve had recently has made me just want to get out and enjoy nature. To spend time outside. Start thinking about all the things I want to do this summer. Oh, and start getting excited for Easter.
Easter is one of those great holidays where a whole line of candy is rolled out that only appears once a year. Some of the best candies are Easter candies! That has left me inspired to make something to take advantage of all of those fun and colorful treats. Today’s recipe to do just that is Easter Popcorn Bars. They are just so cute!
They are light and crispy, sweet and salty, without being overpowering! They are so fun that they make the perfect addition to an Easter basket or care package this spring!
I stopped over at Target earlier and there are so many tempting options! There are some amazing DOVE Peanut Butter Eggs, Starburst Sweet and Sour Jellybeans, and M&M’s White Strawberry Shortcake (which I even put into my popcorn bars)! I used these plus a DOVE Milk Chocolate Bunny AND a Skittles Bunny Topper to help make the most amazing Easter basket ever! There are just so many tasty treats and cute decorations I can’t help but share!
One of the best parts of these Easter Popcorn Bars is the M&M’s White Strawberry Shortcake that are added to the top! They add such a unique, chocolatey flavor to this snack! These M&M’s White Strawberry Shortcake are only being sold for a limited time and exclusively at Target. Target Super Stores are even hosting a tasting on March 20th! Here’s a picture of where I found these, plus the DOVE Peanut Butter Eggs and Starburst Sweet and Sour Jellybeans!
Ok, time to get into the nitty-gritty. Here are the things you will need:
First you melt the butter and toss the marshmallows until they are fully coated. Once coated, microwave the marshmallows until soft, remove from the microwave and add the white chocolate chips.
Then, toss in the pretzels and popcorn and mix until everything is coated.
Finally, spread it onto a parchment lined baking sheet and top with sprinkles and M&M’s White Strawberry Shortcake! It’s that simple! And look at how pretty it is!
I know this recipe will make everyone’s Easter even brighter.

- 2 tbs unsalted butter
- 28 marshmallows
- 1 cup white chocolate chips
- 7 cups popped popcorn
- 1 1/2 cups pretzels, roughly chopped
- 3/4 cup M&M's White Strawberry Shortcake
- 2 tbs sprinkles
- Line a baking sheet with parchment paper and set aside. Place butter in a large, microwave safe bowl and heat 1 minute or until butter is melted. Add in marshmallows and stir to coat in butter. Place in the microwave and heat 1 minute. Add chocolate chips and stir mixture until chocolate is beginning to soften. Add popcorn and pretzels to the bowl and gently stir to coat all pieces in the marshmallow blend.
- Pour mixture onto prepared baking sheet and press into a flat layer. Sprinkle on M&M's White Strawberry Shortcake and sprinkles, pressing into the bars. Allow to cool for 10 to 15 minutes before slicing to serve.
