Light, robust, and packed full of fresh flavors, Fresh Tomato Salsa is a true knockout. It is so simple to make and way better than anything store-bought!
Do you ever feel like it is so humid outside that the moment you leave the air conditioning and step outside you feel like you’re being suffocated? That’s what the weather has been like the last two days in Maryland. You step outside after being in a cool, crisp room and into a blast of heat that is oppressive. The moisture level in the air nearly takes your breath away and it feels hard to breath.
This situation was made exponentially worse when I had to work at an outdoor event this past Saturday wearing long sleeves and long pants. Not a spit of wind. After just an hour and a half I was dead. The whole rest of the day I was trying to get in fluids to ward away my pounding headache, tense nausea, and overall weakness. Thankfully, the rest of the day I managed to keep indoors.
And thank God for whoever invented air conditioning. I’m pretty sure that’s my favorite invention ever. Like, for real.
Other than working, the heat confined me and visiting family members indoors. While they wanted to go out on the Bay and by the water, we instead settled for a few seats in a cool movie theater and a shopping trip in the Annapolis mall. Much better. Plus I got to explore one of my favorite stores, Crate and Barrel. I tell you what, I would buy out that whole store had I the option. I love everything there! I want it all!
In an effort to keep cool and in refusal to turn on the oven, I was inspired to make a cool and fresh tomato salsa.

Not usually one for salsa, I wanted to find a recipe that would suite even my picky palate. The formula was simple. Lots of fresh tomatoes, adding in a hint of garlic, heating it up with red pepper flakes, and finally nixing the cilantro. I know, I know, salsa purists all over the world are gasping at the very thought. But for me, it was an easy decision.
Cilantro is the herb that I can just not get into. I don’t really like the taste of it and find it way too overpowering. I take a bite of something with cilantro in it and that is all I can taste. Therefore, I had to nix it. Now, if you are a lover of cilantro, you can definitely add it into this recipe! I would start with 2tbs or so and add more to fit your taste!
It has definitely converted me into a salsa lover! I hope this super fresh, flavorful salsa converts you too!
- 2-3 medium sized tomatoes, roughly chopped
- 1/4 red onion, roughly chopped
- 1/2 jalapeno, seeded
- 3 cloves garlic
- 2 limes, juiced
- 2 tbs fresh parsley
- 3/4 tsp red pepper flakes
- 1/2 tsp salt
- Combine all ingredients in a food processor and pulse until chunky. Serve chilled or at room temperature.
