About a year ago, my parents made the decision to sell the home I grew up in and move to a new house. We went from a normal suburban neighborhood to a home resting on a quiet chunk of land. Our backyard meets the edge of a nature preserve, so the area behind us is entirely wooded. After settling in we began to notice that throughout the day we could see deer from the back of our house.
In backing to the woods, we have had the opportunity to learn more about these deer that we playfully refer to as our pets. The deer are very odd. If we are out and about in the yard with the dogs, talking and eating dinner, they almost seem to ignore us, rarely even looking up. And yet, if we look at them through our glass door leading to the patio, every one of their heads is raised, staring in caution at us looking at them through the door. It really makes no sense. We can be out walking around in the grass just 60 yards away from them and they are fine, but heaven forbid we look at them through the glass. They are on high-alert then! They certainly are strange little creatures.
Over the summer we see them quite a lot, which is perfect for our evenings on the patio. This evening, our night is made even better with the presence of these Honey Baked Peaches.

This recipe quickly became a favorite in my family. The inspiration came form a Spanish cookbook I purchased while studying abroad in Madrid. The baked peaches sounded too good to pass up, so after testing them on my family, I knew it was a keeper! They are one of my favorite, simple, healthy desserts for summer. - 3 peaches, washed, pitted, and cut in half
- 3 tbs pecans, chopped
- 3-4 tbs honey
- Preheat oven to 400F. Line a baking sheet with aluminum foil and grease with cooking spray.
- Place sliced peaches face up in a single layer on the baking sheet. Drizzle on honey and top with chopped pecans.
- Cook 12-15 minutes or until peaches are soft and pecans are toasted. Serve warm.
