This Mediterranean Flatbread is a quick and healthy hunger crusher! It’s loaded with a ton of good vegetables making it the perfect vegetarian lunch!
Bikini season is a scary time. Suddenly you are pressured to show the world your post-winter hibernation self in a teeny tiny swimsuit. Like most ladies out there, that means finding ways to cut back on junk food, exercising, and struggling to find that perfect swim suit that hides some of the things you can’t stand to look at yourself. Being a lover of food, dieting has always been a struggle to me. I love cheese. I love pastas and bread. And I REALLY love sugar (like a lot).
How could I ever force myself to cut out one of those main food groups in my life? After all, Italians eat pasta, bread, and pizza all the time but you don’t hear about them on diets? If they can do it, why can’t I?
Fortunately this year I have been able to stay pretty healthy. With work I am on my feet walking around and moving things for hours on end. I don’t even really feel the need to go to the gym anymore because I get such a good workout at work! Since I’ve started there I’ve lost 5lbs! Go me!
The last piece of the puzzle is to try and eat a balanced diet. With all the pasta, bread and sugar I love, I try to have a good breakfast, and one good healthy lunch or dinner per day. Sometimes this is something simple as a protein shake with carrots and hummus, and other days it is a sandwich like the one I’m talking about today.
This flatbread is all around good for you. It is an excellent source of vitamins and is so easy to make! Making my flatbread only took me about 10 minutes!
The combination of flavors here is the crowning jewel of this dish. The smooth hummus is accented with the salty feta. Then, the crispy cucumbers contrasts well against the smooth tomatoes and slightly chewy artichoke hearts. The whole thing comes together to make a party of textures and tastes that is perfect for lunch!
This is a meal that I can feel good about. It is an excellent addition to my increased activity and helps to counteract my daily need for sweets!
If only I had a good wholesome dessert to go with it… Maybe we’ll see later this week what that will be 😉
- 1 flatbread
- 1-2 tbs hummus
- 1/4 cup feta cheese
- 1/2 cup mixed greens
- 1 small tomato, cut into slices
- 5 slices of cucumber
- 2 artichoke hearts, chopped
- Prepare the sandwich by laying out the flatbread. Spread on hummus then sprinkle with feta. Add on all remaining ingredients and serve.
