Dinner is ready in just 30 minutes and in just one pot with this One Pot Beer Cheese Soup! This soup will make putting dinner on the table this winter super simple and super tasty!

What a week I have had! On Monday I left Italy to fly back home for the next few months. What is typically a 14 or 15 hour journey ended up being one that was 28 hours long… Yes… I was not too happy to say the least.
I started the day by waking up at 3:30 am Italy time on Monday morning (which is 9:30 pm Sunday EST). I got dressed, dropped off at the airport, and waited for my first flight of the day to Munich, which was about an hour and a half. I arrived in Munich on-time and had a 4 hour layover. After those 4 hours I got on a plane to Toronto which was delayed during flight due to strong wind currents (leaving me on the plane for 9 1/2 hours). Then, because the flight took longer than expected, I missed my connecting flight into Baltimore and the next one did not leave for 5 hours. So, I sat around the airport for 5 hours. When it was finally time to board my flight they announced that there was confusion with the planes and that instead of leaving at 8:30 pm as scheduled, we wouldn’t be leaving until 11 pm. That was when my 5 hour layover turned into a 7 1/2 hour one. Finally, the flight from Toronto to Baltimore was about 1 1/2 hours. Then I had to get my bag and go home, finally arriving to my house at about 1:30 am on Tuesday (which is 7:30 am Italy time).
Therefore, I was in route from essentially 9:30 pm on Sunday night to 1:30 am on Tuesday morning.
Talk about going stir crazy…
Needless to say when I was finally home the first thing I wanted to do was shower and put on the most comfortable pajamas I own.
Of all the times I’ve traveled back and forth, I’ve never had it be as terrible as that route was. Thankfully I’m home with my pajamas, my bed, and this One Pot Beer Cheese Soup. (You knew I had to get to that eventually).
This soup is so tasty. When I was cooking it my kitchen smelled absolutely heavenly! The rich, wheaty beer in the soup just radiates throughout the room. Then this soup is so warm and creamy without being overly heavy or thick.
The soup is just the perfect thing to grab and take with you on your way to the sofa. It’s comfort in a bowl.
The best part? It is made in one pot and in only 30 minutes! Ok, so I guess that is two things. But still, this makes dinner prep so easy! Perfect for those busy holiday weeknights!
Try out a big bowl of this tonight! (And I hope your holiday travels are less lengthy than mine were earlier this week!)
- 5 tbs unsalted butter
- 1 yellow onion, diced
- 1/3 cup all purpose flour
- 1 cup milk
- 1 cup half and half
- 1 bottle beer (I prefer a light, wheaty beer)
- 1 cup chicken broth
- 1 tsp dijon or spicy brown mustard
- 2 cups shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- Parsley, to garnish
- Place a pot over medium heat. Add butter to pan and allow to melt. Add in diced onions and cook until onions have become translucent and soft, about 8-9 minutes. Whisk in flour until well incorporated. Allow flour and onions to cook for 1-2 minutes.
- Add milk and half and half into the pot and whisk to combine. Allow mixture to heat until thickened (this should only take a few minutes). Once thickened, whisk in all remaining ingredients. Simmer until fully combined, hot, and cheese is melted.
- Serve with parsley if desired.
