Happy Monday! (if there is such a thing)
My weekend was actually very rejuvenating. Last weekend I was swamped with creating 4 blog posts AND crafting away on wedding decor. This weekend I decided that I really deserved a break, so I took the time just to do things I enjoy.
I slept in on Saturday and made myself a good breakfast for the first time in months. I did some shopping, read a little, talked to Matt, and met a friend for dinner. It was so nice to just take time for myself again. I definitely need to work on making more time for myself like this.
After my nice relaxing day, I wanted to make a simple, skinny, and delicious dinner. And since I was feeling the zen, I decided to whip up some of this Thai Basil Chicken.
This meal could really not be any easier. You really just need to prepare the ingredients and cook it all up in one pan and in just 25 minutes start to finish.
The finished product is light and flavorful. The basil really lightens the whole dish while the red pepper flakes give it a nice heat. This is a great, lazy night, meal and not your plain old chicken recipe.
