Waldorf Salad is the perfect, healthy meal for any day of the week. Is is full of fresh fruit and is a great easy meal!
If for nothing else, I was famous at my old job for one thing: consistency. And not necessarily just in the work itself, but in food as well. Everyone knew this little corner cafe was my favorite where I would pretty consistently get a Waldorf Salad. In fact, I was there so often that the people working at the shop knew me, and my order, by name. I had a problem. I’ll admit it.
Now, since I have left that job I am much further away from the cafe. I have not, however, lost my taste for Waldorf salad. Hence, this post was born.
This salad is just as amazing as any one I have bought at any place before this. I love the slightly sweet and peppery dressing, mixed with fresh fruit, nuts, and cheese. It’s like heaven in a salad to me.
Give it a try! And let me know if you have any places that know you by name (or your order)!
Prep time 10 minutes, Serves 4
- 6 tbs olive oil
- 2 tbs apple cider vinegar
- 2 tsp honey
- 2 tsp dijonaise
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 bag mixed leaf lettuce
- 2 apples, sliced
- 1 cup walnuts, chopped
- 1 cup blue cheese, crumbled
- 1 cup dried cranberries
- Prepare the salad dressing: Whisk first 6 ingredients until emulsified and fully incorporated. Set aside.
- In a large bowl place lettuce, apples, walnuts, blue cheese, and dried cranberries. Toss with reserved dressing.
Note: To prevent apples from browning, lightly toss in lime, lemon or orange juice. The acid in citrus will prevent it from browning.
