Watermelon Salad with Balsamic Reduction is a quick summer salad! Made in just minutes, the sweetness of watermelon comes to life with the addition of feta, red onion, and balsamic vinegar!
How is school already starting again? This summer has just flown by! I can’t believe that this is my last post before I start my grad classes again! Definitely not looking forward to getting back into reading mass amounts of papers looking for only a sentence or two that is actually relevant. Or logging in and finding something to say about another classmate’s comments on the discussion board. And don’t even get me started on tests…
All this class stuff had me feeling a bit melancholy. How can I squeeze out just a little more summer?
What is the most summery food I can think of?
Watermelon literally screams summer (ok, maybe not literally but it does make you think of summer, doesn’t it?!)
Fun fact, did you know that my favorite part of the watermelon is the part right on the rind? I love how it is less sweet and sometimes slightly tart. I always have to ask my mom to save the rinds for me!
Even if I don’t have the rinds, I could always definitely enjoy watermelon in this Watermelon Salad with Balsamic Reduction.
This idea came to me while brainstorming recipes and is brilliant! The texture and flavor profiles are out of this world!
The crisp, cool, and refreshing watermelon serves as the perfect first flavor upon taking a bite. Then you taste the sharpness of the red onion and the intense sweetness of the balsamic reduction. Finally, the salty feta pulls the whole combination together.
The flavor is amazing!
What’s even better is how easy it is! This salad is prepared in just minutes and is great for summer nights when the weather is warm and you just want something light and refreshing to eat.
It is a great way to hold onto summer and enjoy the last little bits of it that I can get!
- 1/2 cup balsamic vinegar
- 2 tsp honey
- 1 1.5" thick whole seedless watermelon slice
- 1 cup arugula
- 1/3 cup feta cheese
- Thin red onion slices, to taste
- Prepare the balsamic reduction. Heat a small saucepan over medium heat. Turn on oven fan and add balsamic vinegar and honey to the pan and bring to a simmer, whisking occasionally. Once simmering, reduce heat to low and allow to simmer for 10 to 15 minutes, or until reduced and stays on the back of a spoon, whisking occasionally. Once reduced by about 1/2, remove from the stove and allow to cool in the refrigerator 10 minutes.
- Meanwhile, prepare the salad. On top of the watermelon round, place arugula, feta cheese, and onion. Once cooled, drizzle on balsamic reduction to taste, about 2 tbs worth. Slice watermelon into 6-8 even slices.
- Serve slightly chilled.
